Sorin Vladescu





Dr. Sorin-Cristian Vladescu is a Lecturer in Engineering at King’s College London and an Honorary Lecturer at Imperial. Throughout his career, he has built a deep expertise in developing novel tribological characterisation methods. His research vision is to solve real-life tribological challenges, from automotive engineering to sustainable food innovation. He founded the Green Tribology Lab, now part of King’s Net Zero Centre, to drive the College’ sustainability efforts.

He holds four patents, published 30 journal papers, and has received multiple awards, including the Tribology Trust Bronze Medal from IMechE, two Best Poster presentation awards, six research grants as Principal Investigator (e.g.: Taiho-Kogyo Tribology Research Foundation) and a Research Fellowship by the Japan Society for the Promotion of Science.

Abstract:
Mimicking the Mouth to Characterise Beverages and Foodstuffs: Mucin-Based Tribology and In-Situ Fluorescence Microscopy

Understanding how foods and beverages behave in the mouth requires more than traditional friction measurements; it calls for tribological methods that capture the biological and sensory complexity of oral processing. In this talk, I will present our efforts to overcome current limitations in food tribology by developing experimental platforms that better mimic the mouth. These include mucin-coated surfaces that replicate the natural salivary pellicle for reliable friction testing, and in-situ fluorescence microscopy to visualise how fats and proteins move within soft contacts in real time. Together, these techniques have been applied across a range of food systems, from plant-based milks and carbonated drinks to protein-rich formulations, revealing how composition, structure, and surface interactions shape sensory perception.
